An evening gown and a cheongsam / xi pao. NOT!

I was asked by many friends how many changes in outfit I will have the day of my wedding. My answer is 1, my wedding gown.

I will be buying my wedding gown and since I only get to wear it once (in public that is), I want to wear it for as long as I can. Also, changing into gowns is not the easiest thing to do, so if I am going to change into something else, it better well be something comfortable (maybe a little white dress at the after party!)

So yes friends, please be prepared to see me in my wedding gown the entire time.

My plans to come back to Malaysia is confirmed! I will be arriving KLIA on the 21st of May (Mon) at noon and will be heading back to Houston some time end of June (have not got that ticket booked).

TCG Chairman, can we have TC? I am dying for some yummy food!

Picking a date for our wedding wasn’t difficult for us. No we didn’t get a feng shui master to match our date of birth and pick us a date. Instead we asked Adam’s sister Lian to send us dates when her kids will break up from school since within the immediate family, they are the only ones at school. Holly is 10 and James is 7.

The kids are off school mid December to early January but that’s the peak travelling period, I don’t think it’s wise to have our wedding then. It will be difficult to make flight bookings and cost of accomodation in Langkawi will go sky high.

Holly and James are then off school again from 20th March 08 to 14th April 08. We picked 29th March 08 because it gives us abit more time to plan the wedding and it gives the kids a few days in KL to get their body clock right before the wedding.

It has been awhile since I blogged about my cooking. Some days I don’t cook tasty enough dishes to blog about and some days I just assume the food will not taste good and didn’t take any photos of it.

Lately I have been very diligent at taking shots of my cooking and hopefully that will start me off blogging about what I cook again.

My favourite dish this week – Chicken Pie with Asparagus and Mashed Potatoes. My first attempt at making this type pie and it taste delicious!

This dish is not all that difficult to make. You first cook the pie filling, fill them into a remekin, top it off with filo sheets and bake!

Pie Filling

Olive oil

Yellow onion – chopped

Chicken meat – cubed

Mushroom – sliced

Peas

Carrots – diced

Heavy cream

Half & Half

White wine

Chicken bouillon

Pepper

Dried oregano

First some olive oil to fry the onion. Once the onion is soft, add chicken pieces. When the chicken starts to turn brown, add white wine.

Allow the wine to evaporated a little, add the mushroom, peas and carrots. Once the vegetable is half cooked, add heavy cream, half & half and chicken bouillon. I like my chicken pie creamy, so I have more heavy cream than half & half. Stir them well, add some black pepper and dried oregano and let it simmer for about 5 minutes.

Remove from heat and fill the remekins.

Cover the remekins with fillo dough, one sheet at a time. Melt some butter, have a brush at hand and get ready to cover the pie.

Cut fillo sheets into the size required. Place one sheet on the remekin and brush some butter on the sides to help seal the remekin and then on the rest of the sheet. I repeated this step 4 times for each pie but some recipes online has 8 sheets of fillo, so I guess it’s entirely up to you.

When ready, put the pies into a 375F oven and bake for 15 minutes or until crust is brown.

Preparing the asparagus is very simple.

Boil some hot water in a pan, once water is boiling hot put the asparagus in. When the asparagus turn into a beautiful green colour, remove from water.

Place some butter in a bowl and put it into the microwave for about 45 seconds or until butter has melted. Add some pepper into the melted butter and pour it over asparagus.

This is easy to make, tasty and very filling. I like the idea of being able to prepare the filling ahead of time so that when Adam is home from work, I don’t have to spend too much time in the kitchen.

I am not a fan of puff pastry which is why I used fillo. I don’t really like the taste of the fillo and I would like to try making some sort of crust the next time I give this pie another try. If you have any suggestions for the crust, please let me know.

I have been telling some friends that I fell in love with the ring long before I fell in love with Adam. I have always loved jewellery from Tiffany and had my eyes set on its classic brilliant cut diamond ring.

I always tell Adam which ring I want, even before he decides that he wants to marry me. I remember telling him if Tiffany is too expensive, please get me something of a similar design and the diamond has to be at least 0.75 carat.
When Adam was ready to ask me for my hand in marriage, he went to Tiffany at the Galleria Mall in Houston to pick my ring out. Worried that he might get the wrong one, Adam texted my sister in Malaysia and they emailed him the URL of the engagement ring I love.

Adam tells his friends now that shopping for my engagement ring was a breeze because I have decided for him what to get me. It saves him time walking around different stores comparing prices and diamond cuts and quality. All he had to do was to walk into Tiffany, tell them how much he’s willing to spend on my choice of engagement ring and they gave him a few rings to choose from. He didn’t even have to worry about the size of the ring as all engagement rings in Tiffany comes in size 6!

We didn’t call anyone right after I accepted the proposal, not our parents at least. I told my youngest sister over MSN the following day and sent an email to my other sisters and closest friends to share the news.

It was more difficult to tell our parents than I have imagined it to be. We waited until Monday to call our parents to inform them the good news. I guess we were reluctant to call them earlier because we knew we have to have some answers ready for their never ending questions like when and where will the wedding be, the type of ceremony we intend to have and the thousand other questions.

Also we have to be ready for the tears of joy from mothers (and stepmum). This is something we are not good at dealing with.

Adam and I got the greatest reponse from our friends. There were some really funny ones and some very touching ones. We are very thankful that we have such wonderful friends who are so happy for us.

9th of March, 2007 – a normal Friday evening at home.

Adam got home from work and like most Friday evenings we have appetisers with some wine before dinner. We had crackers and carrot sticks with a very delicious dip that we both enjoy very much – The Love Dip (how appropriate). Love Dip is a creamy, garlicky dip which is very delicious and you can’t really stop once you started.

For dinner I prepared Parmesan crusted chicken with sauteed spinach and garlic mashed potatoes (more garlic! If only I knew what Adam had planned).

We remained at the dining table after dinner for a nice chat and more wine. Adam had the TV turned off and put a CD on. Robbie Williams sang Angel, Adam asked me to marry him and I said YES!

I was thrilled! I grinned from cheek to cheek the whole night – WE ARE ENGAGED!. The whole week I would just look at my engagement ring on my finger and that itself will put a smile on my face. Believe it or not, I still do that now.

I know we will get married soon but I expected Adam to propose on my birthday which is just a week away. If I knew this was coming I will eliminate all garlicky food. Also I was not dressed for the occasion. I had a simple tee and shorts on, greasy hair (in dire need of a wash) in a bun. Goodness me.

Adam wanted to plan for us to have a nice dinner out but the ring box was too big and it’s impossible for him to hide that size of a ring box so he has to pop the question at home. Anyhow, it was still a perfect evening!

After the SSA meeting yesterday, we went for lunch at Dessert Gallery. This place has a huge variety of cakes, cookies, brownies and cupcakes!

They have a deli as well but the main attraction here is the dessert. I had a cup of soup and half a sandwich which didn’t left much space in my tummy for dessert, so I bought some home to be enjoyed after dinner.

Yellow means it’s butter cake. The frosting is so sweet, so delicious! It goes so well with the cake. The bites on the sugary icing is just yummy!

This is my new favourite spot for cupcakes and they are only $1.95 each. There goes my plan to lose some weight.
